From Fuji's top-of-the-line Reigetsu series, this is a high-quality, professionally constructed Japanese knife that expertly balances supreme sharpness with easy maintenance. 

Although gyuto knives are partial to meat, they are excellent for almost anything else you’d need. The double-bevel design of the blade means that the edge is very durable, so they’re well-suited for slicing and dicing hard vegetables like daikon and pumpkin, without dulling the blade.
