Koya Dofu is a tofu that has been freeze-dried and aged to make it light and preservable.

This nutritious Japanese Koya Dofu is cut in small sized shaped cubes for your convenience and can be eaten just by soaking it in water.

It is made with concentrated soybeans so it has lots of nutrition; 1 cube of Koya Dofu (19.5 grams) contains 129 mg of calcium, 9.6 g of vegetable protein, and 1.3 mg of iron. It also contains essential amino acid.

Instructions

a) You can simply soak Koya Dofu in warm water (about 50°). But since it doesn't have much taste itself, it is recommended to stir, stew or fry with sauce or other ingredients.

b) Typical Japanese way to enjoy Koya Dofu:

- Simply cook 39g of Koya Dofu in 400ml of boiling Dashi Soup.

- Cook about 10 minutes with a low heat, turn off the heat, and let the tofu stay in the soup for a while.

c) You can also use Koya Dofu as substitute of meat. For example, you can grate the tofu and cook it with vegetables for making pasta sauce.
